Tropical grilled peach avocado salad with Explosive Pineapple VinaigretteLetssalsa
- 2 peaches
- 1 tbsp olive oil
- 1 avocados
- 200 grams arugula
- Fresh mint and thyme
Explosive Pineapple Vinaigrette
- 1/2 tbsp freshly squeezed lemon juice
- 1/2 tbsp white wine vinegar
- 1 tbsp honey
- 100 ml extra virgin olive oil
- 1 tbsp Explosive Pineapple hot sauce
Remove the pits from the peaches. Cut the peach into quarters. Brush the peaches with the olive oil and grill them in a hot griddle pan for about 3 minutes per side.
Peel and pit the avocados and cut into thin slices.
Divide the arugula between 2 plates, put slices of grilled peach, 1 avocado, mint and thyme on each plate.
Finish with garnish of your choice.
Serve with the Explosive Pineapple Vinaigrette
