Mexican quinoa salad with crispy homemade tortillasLetssalsa

- soft corn tortillas
- 125 grams of cooked quinoa
- Half a can of corn
- 1 orange
- 1 ripe avocado cut
- 200 grams of arugula
- Fresh dragon bunch
- Handful of pistachios
- 1 large lime squeezed
- Squeezed orange in half
- 1 teaspoon of honing
- 1 teaspoon Roasted Chipotle Hot Sauce
- 3 tablespoons of extra virgin olive oil
Cook the quinoa according to the package.
Meanwhile, prepare salad ingredients by cutting vegetables and half of the orange.
Prepare the dressing by mixing all ingredients in a bowl until smooth.
Mix the vegetables and herbs with the arugula and finish with peeled pistachios and sliced avocado.
Finally, drizzle the dressing over the salad.
Serve with crispy homemade tortilla chips for an extra bite.
Home made tortilla chips
Preheat the oven to 180 °C, spray some oil on tortillas and sprinkle with a bit of salt. Bake in the oven for 10 minutes-15 minutes until they are crispy. Get them out of the oven.
