Huevos rancheros tostadas
- 2 Soft Corn Tortilla 12cm
- 4 ripe tomatoes peeled and chopped
- 1 white onion chopped
- 4 tbs Roasted Chipotle hot sauce
- 1 clove garlic chopped
- 2 eggs
- extra virgin olive oil
- fresh coriander
- salt to taste
- classic side dish: fried beans
Ingredients Pico De Gallo
- 1 medium tomato, diced
- 1 onion, finely chopped
- 1 fresh jalapeño pepper
- 2 tbsp fresh cilantro, finely chopped
- 1 clove garlic
- salt and pepper to taste
Preheat the oven to 180 °C, spray some oil on tortillas and sprinkle with a bit of salt. Bake in the oven for 10 minutes-15 minutes until they are crispy. Get them out of the oven.
Preparation Pico De Gallo
In a medium bowl, combine tomato, red onion, jalapeño pepper, garlic. Season with salt and pepper. Mix well. Refrigerate for 20 minutes.
Instructions poached eggs
Pour boiling water into a pan and reduce to a simmer. Add a dash of vinegar to the pan
Crack the egg into a. cup, then gently into the water. Simmer for 2-3 minutes.
Carefully remove the poached egg with a slotted spoon.
Instructions Huevos rancheros
Heat 1 tbsp olive oil in a non-stick pan over medium heat and add the onion and garlic for 10 minutes and add the peeled tomatoes.
Simmer for 15 minutes without boiling. Add 4 tbs Roasted Chipotle hot sauce and a pinch of salt.
Stir from time to time for 10 more minutes.
Top the tostada with the sauce and a poached egg. Garnish with 2 tsp pico de Gallo and chopped cilantro
Spicy orange juice
Ingredients for two Servings
- 250 ml orange juice
- 2 tsp of Explosive Pineapple hot sauce
- Clove of ginger
Pour chilled fresh orange juice into a glass. Add 1 tsp of Explosive Pineapple hot sauce or to taste in each glass. Grate a piece of ginger into the glass. Stir the juice well and serve chilled.
