Fried Chipotle tofuLetssalsa
Lunch/ dinner/ snack, 4 serving
30 minutes preptime (plus 30 minutes cooking time)
- 425g tofu, drained
- 4 tbs Roasted Chipotle hot sauce
- 2 tbs Lime Juice
- 2 tsp Tomato Paste
- 2 Garlic Cloves, minced
- Salt and peper by taste
- 2 tbsp Feta cheese
- Almond slices
Drain the tofu and press the tofu for 20 minutes.
Preheat oven to 200 °C.
Slice the tofu into thirds lengthwise so you have 3 even slabs. Stack them on top of each other and slice through them lengthwise to make 3 even columns, then slice across to make 5 even rows.
Add the roasted chipotles, lime juice, olive oil, garlic, tomato paste, and salt. Whisk to combine. Add the tofu to the marinade in a single layer. Poke each slice with a fork several times, then flip the tofu over and press into the marinade.
Bake for 25 to 30 minutes, tossing the tofu regularly.
Divide an equal number of tofu cubes on each BBQ skewer.
Garnish with thyme, almond slices and feta cheese
