Spicy vegan Jackfruit Carnitas taco
Ingredients
- 6 x 12cm soft corn tortillas
- 2 cans jackfruit
- 4 tbsp olive oil
- 2 tablespoons ground cumin
- 1 tablespoon dried oregano
- half a teaspoon red pepper flakes
- 3 tbsp orange juice
- salt and black pepper
- 3 tbsp Roasted Chipotle hot sauce
Garnish
- 3 tablespoons chopped fresh cilantro leaves
- 1 lime, cut in wedges
Preparation
Drain the jack fruit and shred the jackfruit flesh into a bowl along with the oil, cumin, oregano, pepper flakes, half of the orange juice and salt and pepper, roasted chipotle hot sauce and mix well.
Heat a large skillet over medium-high heat, then add the jackfruit mixture. Cook, stirring occasionally, until the jackfruit is evenly browned, 20 to 30 minutes. Remove the skillet from the heat and stir in the remaining orange juice. Season extra with the roasted chipotle hot sauce to taste.
Place the tortillas in the dry pan. Turn the tortilla every 20 seconds until it feels soft.
Serve the carnitas hot with tortillas. Squeeze lime over each taco garnish with cilantro before eating.
