Christmas recipe: Merry Cranberry mashed sweet potato with goat cheese (vegan)

Ingredients
- 3 sweet potatoes
- 1 floury potato
- 1 vegetable bouillon cube
- 150 gr grams of arugula
- 150 grams plant based goat cheese (G-oats Cheese Max & Bien)
- drops of Merry Cranberry hot sauce depending on your heat rate
- 1 clove of garlic
- half a teaspoon of smoked paprika
- 4 fresh sprig of thyme
Garnish
- arugula
- thyme
- plant based goat cheese (G-oats Cheese Max & Bien)
- Merry Cranberry hot sauce
Preparation
Peel and chop the potatoes into 1-inch pieces. Place the potatoes in a large pan filled with water and the bouillon ion cube. Boil uncovered for 15 minutes or till they are very soft.
Drain the potatoes well ( keep a little bouillon aside) and leave them in the pan.
In the same pan, add half arugula, 2 sprig of thyme, goats cheese, garlic, smoked paprika and simmer till the arugula is soft. Add salt and pepper. Turn off heat. Mash well. If the mashed sweet potato is too thick, add bouillon.
Divide the stew among the plates. Divide the rest of the goat cheese and thyme.
Finish with Merry Cranberry hot sauce to taste.
Tip: also great with regular goat cheese.
