Chipotle Pumpkin SoupLetssalsa
- 1 pumpkin
- 1 onion
- 2 clove of garlic
- 2 tbsp Roasted Chipotle hot sauce or to taste
- 2 tbsp olive oil
- 1 tsp turmeric
- salt and pepper
- 200 ml coconut milk
- 1 or 2 vegetable stock cubes
- garnish: fresh cilantro and chilli flakes
Preheat the oven to 200 °C. Meanwhile, cut the onion and pumpkin into large pieces and divide over the baking tray together with the unpeeled garlic cloves. Drizzle with Roasted Chipotle hot sauce, olive oil, turmeric, salt and pepper. Roast everything in the oven for 15-20 minutes.
Bring 1 liter of water to the boil, and add 1 or 2 vegetable stock cubes.
Remove the baking tray from the oven and remove the skin from the garlic. Add everything together with the coconut milk to the stock. Let it boil for about 15 minutes.
Remove the pan from the heat and puree with a hand blender.
Garnish the soup with the Roasted Chipotle hot sauce , some cilantro and chili flakes.
